Cannon Hall Open Farm is a major visitor attraction set within rolling farm land near Cawthorne, Barnsley opening every day except Christmas Day.
This family run attraction started as a working farm and over the years has developed to include a small animal farm, children's play area, picnic area, shops, high quality butchery, ice cream parlour and new delicatessen displaying superb home made pies, pastries, cooked meats and cheeses.
It is a facility also used by neighbouring local authorities who arrange educational coach trips as part of the curriculum for primary school children.
We have been privileged over the years to play a significant part in the ongoing development of this well known venue.
Building on our success we have been nominated to design and install a new catering facility as part of an exciting new extension to the Restaurant which will effectively double the current capacity to around 240 covers.
Our brief was to introduce a design incorporating new equipment with the existing equipment capable of producing a top quality, home produced menu, cooked to order, while limiting queueing and waiting time to a minimum.
1. Servery
Objective
To design a new self help servery and re-furbish the existing servery to create two separate identical counter flows.
How achieved
The new servery has the latest drop-in refrigerated and heated self-help display units set at a low level to comply with the disability act. The refrigerated displays are replenished by means of a True sandwich preparation counter located immediately behind the counter. The existing servery has been clad in identical top and front finish with matching tray slide and includes an additional WSM hot display. Matching beverage and till sections are located either end.
2. Dishwash
Objective
To increase the capacity of the existing dishwash area.
How achieved
An additional new dishwash section with a Dawson Commenda pass through dishwasher is included to deal with the dishes from the new dining area.
3. Kitchen
Objective
To increase the speed and output without sacrificing the quality of the home produced bakery and meat products.
How achieved
We have incorporated high output, fast MKN clam griddles, Valentine Maxi fryers, Mealstream EC501 combination microwave with and Prince Castle holding bins and other leading brands of high quality durable equipment.
There are two separate 'pass' sections to serve the two counters and each incorporating heated and refrigerated sections.
The combination of all the above factors have provided our Clients with a significant increase in productivity and speed without the need to compromise on the quality for which they have a long standing reputation.
